Barrell Craft Spirits of Louisville, Kentucky, has introduced their Infinite Barrel Project as a complement to the company’s batch releases; the innovative approach to blending offers a whiskey that is ever-changing. Reminiscent of the solera system used to make Sherry, Barrell starts by selecting barrels based on individual complexities, then blends them into a single, “infinite” vessel. At each bottling, the portion removed is then replaced with new whiskey.
