Serving Up: The PVD Iced Tea at Fleur Providence

Cocktail: PVD Iced Tea

Ingredients:
» 1.5 oz. Hennessy V.S.O.P (or your favorite Cognac/Brandy)
» .75 oz. Averna Amaro
» .25 oz. pineapple gum syrup (sub pineapple juice if no syrup is available)
» .25 oz. Licor 43
» .75 oz. lemon juice
» Garnish: lemon twist

Method: In a shaker tin, add all ingredients and shake vigorously for 10 to 15 seconds. Dirty pour into a rocks glass and top with ice as needed. Express a lemon peel over the cocktail and garnish with a lemon twist.

“This is a surprisingly drinkable cocktail that aims to mimic a sweet iced tea. The lemon juice adds immediate brightness, while the layers of Cognac, Averna, pineapple and Licor 43 bring depth, balanced sweetness and complexity. It’s not overly sweet while still being very refreshing—a perfect summer season cocktail,” said Ryan Flynn, Bartender and Creator of PVD Iced Tea. “Tasting notes include lemon and citrus, warm vanilla notes and an herbal complexity akin to black tea. The dirty pour is preferred here, as the ice fragments really help to create an almost slushy-like quality that affords a superior drinking experience—perfect for hot summer days.”
