Simsbury’s Roux Cajun Eatery brings Louisiana food, music and culture to New England. The venue, owned by Stephanie and Vic Civitillo, has become a local hot spot and a surprise-the-tourists gem that offers breakfast, lunch, dinner, decadent desserts, delicious libations, grab-and-go, catering and more. Its name is inspired by a roux, the oil or butter cooked with a flour base used to make gumbos, gravies, béchamels, all kinds of sauces and so many delicious French dishes; therefore, Cajun dishes start with a roux. Its cuisine is a major attraction, as much as its ambience. The venue’s blue accents, exposed stonework walls and wood beams—complete with outside seating and fire pits—offer a relaxed, casual vibe to settle in with a dish and a drink. Cocktails take center stage with creative flavors and blends, including an entire menu of 0-proof drinks that are handcrafted by the team’s bartenders with as much care as its spirited versions.

Cocktail: Roux Blue Quiver
Ingredients:
» 1 oz. St. George Absinthe
» 1 oz. Fruitful Mixology Blueberry Liqueur
» 1 oz. Quiver Spiced Honey Spirit
» .5 oz. lemon juice
» .5 oz. honey simple syrup
» Garnish: blueberry skewer
Method: Combine all ingredients in a shaker. Shake the mixture and serve it over ice. Garnish the cocktail with a blueberry skewer.

Roux is all about our branded blue and our gorgeous blue dog prints by George Rodrigue depicting a French Cajun legend of a werewolf called a Loup-Garou,” said Stephanie Civitillo, Co-owner, Roux Cajun Eatery. “This drink combines locally made Fruitful Mixology liqueur in blueberry; St. George Absinthe, a classic Louisiana liquor with a long and sordid history; and Quiver Spiced Honey Spirit, a local Lithuanian family company using a secret recipe that has been handed down through generations and is distilled just over Talcott Mountain in West Hartford.
