Located in South Norwalk, Taproot is the effort of Jeff Taibe and Stephanie Sweeney, both familiar faces in the Fairfield County restaurant industry. Prior to opening Taproot in Bethel in 2017, Taibe previously served as the Executive Chef of Kawa Ni in Westport and Oak & Almond in Norwalk. Sweeney grew up in Bethel and honed her food-service experience at the Redding Country Club for a decade before spending several years in Westport working at The Whelk, Kawa Ni and Jesup Hall. The team offers a shared vision and commitment to the principles that define the Taproot experience: sustainability, local produce and a bespoke menu offering new, fresh ingredients as the seasons change. The menu is constructed for sharing, a nod to the desire to create a community with “for the table,” “small plates” and “large plates” designations. The beverage side of the house offers an extensively curated menu of wines, sakes, and canned and draft beers, plus meticulous and imaginative craft cocktails for any taste craving.
Cocktail: Family Recipe
Ingredients:
» 1 oz. Rhum J.M. White Rum
» .5 oz. SoNo 1420 Kaffe Primal Forest Coffee Liqueur
» .5 oz. Giffard Banane du Brésil
» .25 oz. dry Curaçao
» .5 oz. walnut orgeat
» .25 oz. lime juice
» 3 dashes walnut bitters
» 3 oz. whole milk
» Optional: aged dark rum floater
Method: Pour all ingredients into a large container (do not stir) and let sit overnight. Strain through a coffee strainer and serve over ice.

The Family Recipe cocktail uses nearby neighbor distillery’s SoNo 1420 Kaffe Primal Forest Coffee Liqueur, which is handmade in small batches using 100% real coffee, making it fit for Taproot’s local and fresh ethos.
