
Glyph Molecular Whiskey, in partnership with Highland Imports, hosted the first of three sustainability workshops geared toward bartenders and bar owners at Olives and Oil in New Haven on January 27. During the workshop, “Bar Waste 101: Reducing and Reusing,” Brendan Bartley, Beverage Director at New York City’s The 18th Room, provided bartenders with the tools to reduce and reuse the hidden waste – including shipping boxes, packaging and more – which are often produced while running a bar. An informal hour of cocktails and light bites provided by Olives and Oil followed the workshop. A March 30 session in New Haven continues sustainability education.
