Opened in November 2018, Torrington’s Brinx Kitchen & Bar is the brainchild of business partners Dylan Jefferis and Kristopher Kelsey, who have combined their shared experience in the industry to provide guests with a bold menu of tapas and small plates along with inspired craft cocktails to suit both classic and creative tastes. Spearheaded by Jefferis, Brinx’s cocktail menu is refreshed seasonally, with an equal blend of classic cocktails such as a Negroni or a Sazerac and signature seasonal cocktails, such as the Cool Runnings cocktail, created by Jefferis for the venue’s winter menu. “I wanted to take a common summer pairing of rum, banana and coconut, such as a Piña Colada, and turn it into a heavier winter cocktail with spices and layering,” Jefferis said. “After playing around with rums, we settled on a nice spice-forward Jamaican-style rum.”

Cocktail: Cool Runnings

Ingredients:
» 1.5 oz Plantation Jamaican Rum or Appleton Estate Jamaican Rum
» .75 oz Amaro di Angostura
» .25 oz Tempus Fugit Crème de Banane
» Dash of brown sugar
» 2 dashes of chocolate bitters
» Float of coconut cream
» Garnish: grated nutmeg
» Garnish: grated chocolate

Method: Add all ingredients but cream to a mixing glass. Stir for 15 to 20 seconds. Strain into a Nick and Nora glass. Float coconut cream over the back of a spoon. Garnish with grated nutmeg and chocolate.

“This cocktail has grown popular amongst all guests,” Jefferis said. “It’s a very classically appealing drink being served in a sexy, lace-etched Nick and Nora glass. And with the cream being layered and a light garnishing of chocolate and spices, it makes for a very easy-to-consume cocktail.”
