Cork & Rye Gastropub is a small and intimate venue in the heart of Warwick. The name stems from a play on wine and whiskey and is its “muse” behind the curated wine-by-the-glass program and one of the largest Scotch and whiskey selections in the state. Fun, playful cocktails that change seasonally, as well as some variations on classic cocktails, are accompanied by everything from a raw bar to carefully crafted sandwiches, grilled pizzas and entrees. Restaurant Manager Erin Sasnett and Bar Manager Jake Parkins work in tandem to create each drink on the menu. Their style of cocktails focuses on bringing seasonal flavors and interesting ingredients together to create unique yet approachable cocktails. For added fun, each drink menu has a hidden theme, typically a movie or musical artist, that guests can enjoy trying to guess, including this month’s showcase.
Cocktail: Uptown Girl
Ingredients:
» 1.5 oz. Grainger’s Deluxe Organic Vodka
» .75 oz. pear nectar
» .5 oz. cardamom-infused simple syrup
» .5 oz. fresh lime juice
» 3 dashes of Fee Brothers Cardamom Bitters
» Garnish: vanilla foam
Method: Add all ingredients except foam to a shaker with ice and shake. Strain the mixture into a highball glass filled with ice. Top with foam. To make vanilla foam*: Mix 12 oz. aquafaba with 4 oz. simple syrup and 1 tsp. Madagascar vanilla into a CO2 charger. Dispense.
*To achieve this at home without a CO2 charger, the foam can be substituted with either 1 oz. aquafaba or 1 egg white in the cocktail with a small splash of vanilla. Dry shake all ingredients for 45 seconds. Add ice and shake again. Strain over ice.
Currently on this season’s menu is featured drink Uptown Girl, inspired by Restaurant Manager Erin Sasnett’s favorite fall spice, cardamom. “This drink blends warm and citrusy cardamom with vanilla and pear to create a drink that is sure to please. The vanilla foam provides a fun and impressive finish that adds a nice texture to the drink,” she said. “The foam is made from aquafaba, a vegan substitute for egg white that creates a foamy meringue-like texture, giving a nice creamy finish without the use of eggs.”
