The Industrious Spirit Company (ISCO) participated in September’s Billion Oyster Party in New York City, known to participating farms for a decade as the Oyster Prom. Freshly shucked oysters from 50 farms across the country, drinks near the waterfront, tastes from restaurants and an all-star shucking competition supported the organization’s work to restore oyster reefs to New York Harbor. ISCO showcased Ostreida, the first-ever oyster vodka made in the United States, and its Seaflow Gin, also made with oysters. To create Ostreida, ISCO performs a distillation using its 100% organic corn neutral spirit and sustainably farmed oysters, which releases their “liquor” into the pot of the still as they steam. As the vapors continue to pass up and through, the spirit picks up hints of minerality and complex oyster aromas. The resulting distillate rests so the flavors can meld, with the team gingerly bringing the proof down to 80. Seaflow Gin, naturally ocean blue in hue, is a maritime-inspired gin made with local oysters and seaweed. The team crafted themed cocktails and offered spirits samples. Proceeds from the event directly support Billion Oyster Project’s restoration and education work. ISCO is distributed in Rhode Island via Horizon Beverage Co.
