J. Bouchon Releases Pais Viejo

Importer Vine Connections is bringing in a historic varietal wine from Chile. J. Bouchon País Viejo 2017 is made from País vines that brothers Julio and Juan Bouchon restored at their family winery in Maule. Chilean País, first planted in the 1500s, was largely discarded in favor of trendier varieties, but the Bouchon brothers see the grape as a slice of Chile’s wine heritage. The País is dry-farmed, then vinified and fermented with native yeast in concrete tanks.
