
Johnson Brothers of Rhode Island welcomed E. & J. Gallo Winery’s Bill Figulski at The Capital Grille in Providence for an Orin Swift wine pairing dinner on October 23. With more than 85 guests, the event showcased iconic red blends from the Napa-based wine line, including Abstract, Papillon, Palermo and Mercury Head, alongside a featured celebration for the new release of 8 Years in the Desert, and white wines Mannequin Chardonnay and Blank Stare Sauvignon Blanc. A six-course meal created by Executive Chef Evan Mathew accompanied the wines while Figulski educated participants. The dessert of assorted chocolate truffles was paired with The Burning Chair Bourbon Whiskey.

- Pumpkin-seed-encrusted sea scallops with pumpkin ravioli and sage beurre noisette paired with Blank Stare, Russian River Valley Sauvignon Blanc in the first course.
- The second course was a burrata salad with oven-roasted pears and artisan greens tossed in a fig vinaigrette paired with Mannequin Chardonnay.
- The third course offered a seared Faroe Islands salmon with autumn couscous, drizzled with a red wine reduction paired with Machete California Red Blend.
- The fourth course, prosciutto-rubbed lamb medallion with lamb demi glaze and creamed barley, was served with Eight Years in the Desert California Red Blend 2018.
