As it prepares to celebrate its 125th year in June, The University Club (UClub) remains a destination in the heart of Providence on College Hill. The venue is recognized for its culinary excellence, creative programs and dynamic community. Founded in 1899 by Professor Edmund Burke Delabarre and Registrar Frederick T. Guild of Brown University, UClub began as a members-only association for those of marked academic and professional achievement to socialize and share ideas across diverse academic fields. Today, it serves professionals, families and legacy members, offering themed luncheons, wine dinners, cocktail events, celebrations and networking, among its features. The beverage program offers many fine wine programs and, via its bar menu, guests can enjoy creative variations on classics as the seasons change. This featured cocktail takes the classic mojito “a step further,” said UClub’s General Manager Michael Dudas, by incorporating bitters and adding a swizzling technique that enhances both the taste and presentation, creating an elevated and refreshing drink experience.

Cocktail: Queen’s Park Swizzle
Ingredients:
» Handful of mint
» .75 oz. lime juice
» .75 oz. demerara syrup
» 2 oz. Mad River Rum 44
» Angostura bitters
» Garnish: mint sprig

The Queen’s Park Swizzle.
Method: Muddle mint in demerara syrup in the bottom of a highball glass. Add rum and lime juice. Add some crushed ice and begin to swizzle. Continue to add ice until the glass is full and frosted. Top with 5 dashes of Angostura bitters and garnish with a mint sprig.
