
Renée Allen, director of the Wine Institute of New England and adjunct professor at the University of New Haven (UNH), teamed up with bartender and spirits educator Anthony DeSerio to talk about the history of rum and Prohibition with Allen’s UNH class, “Rum: The Colonies to Bacardi” on March 29. DeSerio featured Connecticut-founded brand The Real McCoy Rum, which was named for Bill McCoy, the pioneer rumrunner of the Prohibition era. The line crafted by fourth-generation Master Distiller Richard Seale using blackstrap molasses and pure spring water. The rums are single-distilled in a combination of column and artisan pot stills, and then authentically aged in heavy char American oak bourbon barrels.
