New Haven’s Oak Haven Table & Bar team created a Kentucky Owl Bourbon dinner on November 7, 2019. Representatives from Brescome Barton were on hand to educate guests, who enjoyed a three-course dinner featuring Kentucky Owl Confiscated Bourbon, Kentucky Owl 10 Year Kentucky Straight Rye and Kentucky Owl 11 Year Straight Rye Whiskey. Kentucky Owl small-batch bourbon was founded in 1879 by pharmacist Charles Mortimer Dedman along the banks of the Kentucky River, land that was a wedding gift from his adopted father, a town judge. After running it by his wife, he decided to build the C.M. Dedman Distillery. For decades, it produced “The Wise Man’s Bourbon” under Distilled Spirits Plant Designation “No. 16,” one of Kentucky’s original distilleries and part of a booming industry before and after Prohibition.
