Reopening to guests for indoor and outdoor service on June 2 amid the COVID-19 pandemic, The Woods Tavern offers both indoor and outdoor seating in a relaxed atmosphere with free live entertainment, including trivia nights and live music from local acts, all while following the state’s new safety and health protocols. The menu includes American comfort food and popular dishes such as pizza, burgers and pasta with vegetarian options in the mix. Beer is available bottled or by draught with a variety of local craft selections on tap. Specialty cocktails are available to sip while enjoying the laid-back ambiance, including this month’s showcased recipe. “The English Channel is our personal take on a classic drink,” said Owner and Bar Manager Brent Valerien. “It offers a unique blend of citrus and botanicals that are pleasing to the palate no matter the time of year, but especially refreshing during the summer months.”

Cocktail: The English Channel

Ingredients:
» 1.5 oz. Hendrick’s Gin
» 1 oz. Domaine de Canton Liqueur
» Fresh-squeezed lemon juice from half a lemon
» 2 oz. Harvest Valley Organic Juice Peach, Pear and Apricot Puree
» 5 oz. Simple syrup
» 1 Basil leaf

Method: Combine the gin, Domaine de Canton, simple syrup, lemon juice and fruit puree in a shaker. Shake and pour into a cocktail glass over ice. Finish by slapping a fresh basil leaf and adding it to the glass.

Valerien explained his inspiration for the cocktail, saying, “The English Channel, the arm of the Atlantic Ocean that separates Southern England from Northern France, has a known reputation for both its poor visibility and being difficult to navigate. Amidst the coronavirus pandemic, these themes seem to resonate within our own lives and communities. During the past few months, we have had to overcome obstacles and navigate through uncharted waters together. It only seems fitting to ‘Serve Up’ The Woods Tavern English Channel cocktail and say to patrons old and new, ‘Welcome back. We made it!’”
